I don’t know about you, but I sometimes feel defeated after I spend hours in the kitchen preparing meals and homemade snacks that I find to be the right balance of healthy, tasty and acceptable to my children, only to have one denounce it as “yucky” immediately upon sight.
We could all save each other a lot of time and effort if we work together to share recipes that have been proven successful in our own homes, am I right? In that spirit, I’d like to offer up some tried-and-true favourites from my family to yours.
1. Spinach and Cashew Salad
My mom, aunts, uncles, and cousins are some of the best cooks I know. This is a much-loved family recipe that we’ve all made for years. I have never served it without being asked for the recipe, and it’s proven successful with many generations of children. It’s a family favourite for good reason!
1 bag spinach
1 ea.red and green pepper
2 c cooked rice (optional – I usually make it just as a green salad, without rice)
1 c celery
¼ c green onions
2 c bean sprouts
½ c cashews
½ c chow mein noodles
Dressing:
¼ c soya sauce
¼ c olive oil
¼ c vinegar
2 cloves garlic, crushed
1 tbsp sugar (can use less)
salt and pepper, to taste
- Healthy Oats and Applesauce Muffins
While looking for something to do with all of my fresh-picked orchard apples this fall, I happened upon this gem of a muffin recipe. The blogger’s backstory sold me on trying them, but the taste and my kids’ reaction have made this a new family go-to for breakfasts, school lunches, and snacks. They’re so good, in fact, I’ve shared the recipe with my neighbourhood friends, and we’re all making them now!

- Chicken Taco Casserole
Since being diagnosed with Type 2 diabetes several years ago, I have spent many happy hours perusing and testing out Diabetic Living Online’s consistently rave-worthy recipes. This casserole is one of my favourites. It’s quick and easy to make, and packs in the nutrition and flavour. My kids highly recommend it, and I recommend just about anything you find on this abundant website. Give it a try!

- Turmeric Smoothie
My cuties love to start the day with a smoothie. They throw everything from spinach and kale to bananas and berries in the blender and love taking turns pressing the buttons. This recipe is one of the most delicious and nutritious in our repertoire.
